chore(deps): update gem spec list

- Jekyll 4.3.0 introduced `webrick` for Ruby 3.x
- Jekyll's dependency `nokogiri` does not yet support Ruby 3.2. See: https://github.com/sparklemotion/nokogiri/issues/2740/
